Instant Pot Sweet & Sour Asian Meatballs over Rice (Dairy-Free!)
What you'll need:
Instant Pot (yes, this has become the cornerstone of all my easy go-to meals lately!)
Instant Brown Rice, 1 c dry (I used Minute brand)
Fully cooked frozen meatballs, 1 lb (make sure whatever meatballs you buy do not contain dairy if you are cooking DF! I used Great Value brand from Walmart.)
1/2 package frozen bell peppers and onion mix
Ketchup, 1/2-3/4 c
Soy sauce, 1 tbsp
Worcestershire sauce, 1/4 c
Minced garlic, 2 tsp
Brown sugar, 1/4 c
Water, 1 c
Place meatballs and bell peppers and onions in Instant Pot. In small bowl combine ketchup, soy sauce, Worcestershire, garlic and brown sugar. Stir until smooth and then pour over meatballs and veggies. Stir to thoroughly coat.
Set to manual, high for 7 minutes.
Meanwhile cook rice per microwave box instructions because if you're like me you need to do things the easiest way possible (*ahem* can anyone say, "children?"). Who has time for anything but Instant when you've got two littles at home? I digress. Mix 1 c dry rice with 1 c water, cover and microwave for 7 minutes. Let sit for 5 minutes, uncover and fluff with work. I added a little butter (Country Crock Original is dairy-free!) to flavor the rice a bit.
Once meatballs are done in your IP manually release steam. Open and add rice to meatball mixture. Stir well. Serve in bowls and enjoy!
