Sometimes (all times?) you just need a good go-to meat that you can stick in any recipe, any time. Well, this is the one, mommas. This pork tenderloin is tender and juicy, and you can essentially use it in anything and everything - tacos, breakfast items, sandwiches, you name it! To top it off, you get to use your Instant Pot (which as I'm sure you're aware by now, I have a bit of a love affair with) and it's ridiculously easy. Winning winning and more winning.
What you'll need:
Pork Tenderloin (go for size depending on your needs and how much meat you want to end up with)
1/2 c chicken broth
Place pork tenderloin in your Instant Pot. Sprinkle bottom of tenderloin with salt and pepper, flip over and sprinkle top of Tenderloin with salt, pepper, and then the sugar. I eyeballed the spices in this one. Pour the broth in to keep it moist (note for new Instant Pot users: you typically need a minimum of a half cup of some sort of liquid in order for the pot to rise to proper pressure). Set to manual, high pressure for 25 min (if you have a small pork tenderloin, lessen cooking time by 5-7 minutes). When timer goes off, let pressure naturally release all the way. Once the valve is down indicating pressure has been released, carefully open your Instant Pot. Use a meat thermometer to be sure meat is cooked thoroughly. Shred the meat with a fork, and then stir around to mix juices and spices in. Place in storage containers (or put straight into your recipe!) and store for later use.
I used this meat in multiple recipes throughout the week! It stayed tender and delicious days later, and worked great on the sandwiches and tacos that I made.
